50 gm jintan halus }
50 gm biji ketumbar } Disangrai tanpa minyak
40 gm jintan kasar }
150 gm bawang kecil }
150 gm lengkuas } Dihiris halus
30 gm halia }
30 gm kunyit hidup }
3 batang serai }
40 gm bawang putih }
30 gm lada hitam biji
40 gm lada kering dibuang biji dan direndam dengan air panas, tiriskan dan di kisar halus
100 ml minyak
5 cm kulit kayu manis
4 biji bunga lawang
10 biji cengkih
1 kg daging lembu dipotong dadu
1 litre santan pekat
1 sudu teh gula dan gula melaka secukup rasa
1 sudu teh garam secukup rasa
250 gm kerisik (hirisan kelapa tanpa kulit yang disangrai hingga keperangan sedikit warnanya lalu ditumbuk atau boleh beli yang sedia ada di pasar Geylang)
2 helai daun kunyit disiat
Beberapa helai daun limau purut di siat
Peraturannya :

Kisar rempah sehingga halus.

Panaskan pengorengan dan tumis rempah yang dikisar, masak sehingga wangi kemudian masukan kulit kayu manis, bunga lawang dan cengkih.

Kemudian masukkan daging lembu dan santan. Masak dengan api sederhana, sambil dikacau sehingga kuah pekat dan daging matang. Masukkan gula dan garam secukup rasa. Akhir sekali masukkan kerisik,daun limau purut dan daun kunyit. Kecilkan api dan masak sehingga rendang kering dan naik minyak. Mengikut cita rasa masing-masing untuk memasak rendang hingga kering atau lebihkan kuahnya.

Spices (To be blended)
50 gm cumin }
50 gm coriander } To fry without oil
40 gm fennel }
150 gm shallots }
150 gm galangal } To cut finely
30 gm ginger }
30 gm turmeric }
3 pieces lemon grass }
40 gm garlic }
30 gm black pepper
40 gm dry chillies, remove seeds and soaked in hot water, and strain
100 ml oil
5 cm cinnamon
4 pieces star anice
10 pieces cloves
1 kg mutton or beef to cut big cubes
1 litre thick coconut milk
1 tsp sugar and some Palm sugar (to your taste)
1 tsp salt (to your taste)
250 gm kerisik (250 gm shredded coconut without skin, fry without oil and pound or you can buy ready made kerisik from Malay stall at Geylang)
2 pieces turmeric leaves (to shred into pieces)
Few pieces of kafir lime leaves (to shred into pieces)
Method of Procedure :

Blend all spices which to be blended till fine.

Heat oil in wok and fry the spices till fragrant, then add in cinnamon, star anise and cloves.

Then add in the meat, coconut milk. Cook using low or medium fire, stir once a while till gravy thickens and meat cooked. Add in salt and sugar. Adjust to your taste. Lastly add in kerisik, kafir lime leaves and turmeric leaves. Cook using low fire until gravy a little bit dry or up to individual preference for those who prefer to have more gravy.
